Ingredients
2 bone-in, skin-on chicken breasts (1.5 to 2 pounds)
4 tablespoons unsalted butter (softened)
2 tablespoons olive oil
1 tablespoon fresh rosemary (chopped)
1 tablespoon fresh thyme (chopped)
1 tablespoon fresh parsley (chopped)
3 garlic cloves (minced)
1 teaspoon lemon zest
1 teaspoon kosher salt
½ teaspoon black pepper
Optional: 1 lemon, halved
Instructions
1. Preheat oven to 400°F and line a baking sheet with foil or parchment paper.
2. In a bowl, mix softened butter, herbs, garlic, lemon zest, salt, and pepper.
3. Loosen chicken skin and spread butter mixture underneath and on top.
4. Place on prepared pan and drizzle with olive oil. Add lemon halves if using.
5. Roast for 35–45 minutes or until internal temp reaches 165°F.
6. Let rest 5–10 minutes before slicing and serving.
Notes
Store leftovers in the refrigerator for up to 4 days.
Reheat in the oven at 325°F with a splash of broth to keep moist.
Do not microwave to preserve crispy skin.
