Crispy, juicy chicken thighs topped with warm feta and drizzled with homemade hot honey for the perfect balance of sweet, spicy, and tangy.
Ingredients
6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ cup honey
1½ teaspoons red pepper flakes
1 tablespoon apple cider vinegar
¾ cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Lemon wedges (optional)
Instructions
1. Preheat oven to 400°F. Line a baking sheet.
2. Pat chicken dry and place on sheet, skin side up.
3. Mix olive oil and spices, brush over chicken.
4. Bake 30–35 minutes until golden and cooked through.
5. Make hot honey by warming honey and red pepper flakes; stir in vinegar.
6. Top chicken with feta and bake 5 more minutes.
7. Drizzle with hot honey and garnish with parsley.
Notes
Use block feta in brine for best texture.
Adjust pepper flakes to control heat level.
Serve with roasted vegetables or couscous.
