Description
These lemon pepper baked chicken tenders are juicy, crispy, and full of zesty flavor. Oven-baked and ready in under 30 minutes, they’re perfect for quick dinners, meal prep, or a healthy take on classic chicken fingers.
Ingredients
1½ pounds raw chicken tenderloins
1 cup plain breadcrumbs
½ cup grated Parmesan cheese
1½ tablespoons lemon pepper seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika (optional)
½ teaspoon salt
½ teaspoon black pepper
2 large eggs
2 tablespoons milk
1 tablespoon olive oil
Zest of 1 lemon
Chopped parsley for garnish
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a bowl, whisk eggs and milk together.
3. In another bowl, combine breadcrumbs, Parmesan, lemon pepper, garlic powder, onion powder, paprika, salt, and pepper.
4. Dip each chicken tender into egg mixture, then coat with breadcrumb mixture. Press to adhere.
5. Place tenders on baking sheet and brush lightly with olive oil.
6. Bake for 16 to 18 minutes or until golden brown and internal temperature is 165°F.
7. Remove from oven, zest lemon over tenders, and garnish with parsley before serving.
Notes
For extra crispness, place tenders under broiler for 1–2 minutes at the end.
Add BBQ sauce during last 5 minutes of baking for a tangy twist.
Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
