Description
This lightened up creamy garlic chicken recipe uses Greek yogurt for a healthy, protein-packed twist on a classic comfort dish. Creamy, flavorful, and made in one pan.
Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
1 tablespoon olive oil
1 teaspoon salt (divided)
½ teaspoon black pepper
1 tablespoon unsalted butter
6 garlic cloves, minced
½ cup low-sodium chicken broth
1 teaspoon dried parsley
½ teaspoon dried thyme
1 teaspoon cornstarch
¾ cup plain Greek yogurt (full-fat or 2%)
2 tablespoons grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Season chicken with ½ teaspoon salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken 5–6 minutes per side until golden and cooked through. Remove from pan.
2. Reduce heat to medium. Add butter and minced garlic. Sauté 1 minute until fragrant.
3. Whisk in chicken broth, dried parsley, thyme, and remaining salt. Bring to a simmer. Mix cornstarch with 1 tablespoon water and stir into the sauce. Simmer 2 minutes.
4. Turn off the heat. Whisk in Greek yogurt and Parmesan until smooth. Return chicken to skillet and spoon sauce over top.
5. Garnish with chopped fresh parsley and serve immediately with your favorite side.
Notes
Use full-fat Greek yogurt to prevent curdling.
Always remove pan from heat before adding yogurt.
Serve over rice, pasta, or vegetables for a complete meal.
