Ingredients
2 cups cooked chicken breast, shredded or diced
1/4 cup fresh cilantro, finely chopped
3 tablespoons fresh lime juice
2 tablespoons olive oil
1/4 cup Greek yogurt
1 clove garlic, minced
1/4 cup red onion, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare cooked chicken by shredding or dicing into bite sized pieces
2. In a bowl mix lime juice, olive oil, Greek yogurt, and minced garlic until smooth
3. Add chopped cilantro and red onion and stir gently
4. Add chicken and mix until evenly coated
5. Chill for 20 minutes before serving for best flavor
