This creamy Marry Me Chicken with Spinach soup is the perfect cozy dinner. Loaded with juicy chicken, sun-dried tomatoes, and a cheesy, garlicky base — it’s ready in under 40 minutes and made in one pot.
Ingredients
1 lb boneless skinless chicken breasts, diced
1 tbsp olive oil
1 small yellow onion, chopped
3 cloves garlic, minced
1 tsp Italian seasoning
1 tsp paprika
1/2 tsp red pepper flakes (optional)
3 cups low-sodium chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1 cup grated Parmesan cheese
4 cups fresh spinach, chopped
Salt and black pepper, to taste
Juice of 1/2 lemon (optional)
Instructions
1. Heat olive oil in a large pot. Add diced chicken, season with salt, pepper, and paprika. Cook for 6–8 minutes, then remove.
2. In the same pot, sauté onion for 3–4 minutes. Add garlic and Italian seasoning. Cook for 1 minute.
3. Pour in chicken broth and stir in sun-dried tomatoes. Bring to a simmer.
4. Add heavy cream and Parmesan. Simmer 5 minutes until slightly thickened.
5. Stir in spinach and cooked chicken. Simmer 5 more minutes. Adjust seasoning and add lemon juice if using.
Notes
For a dairy-free option, use full-fat coconut milk and omit cheese.
Use fresh spinach at the end for best color and texture.
Soup thickens as it sits — add broth to loosen when reheating.
