Ingredients
2 cups cooked chicken breast, shredded or diced
1 1/2 cups roasted corn kernels
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup cotija cheese, crumbled
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare cooked chicken by shredding or dicing into bite sized pieces
2. Roast corn in a pan until lightly golden
3. Mix mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper
4. Add chicken, roasted corn, onion, cilantro, and cheese and mix gently
5. Chill for 20 minutes before serving
