Ingredients
3 cups cooked shredded chicken
8 oz cream cheese, softened
1 cup sour cream
½ cup cottage cheese
1 can (10.5 oz) cream of chicken soup
1 cup shredded mozzarella cheese
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped parsley
1½ cups crushed Ritz crackers
¼ cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a bowl, mix cream cheese, sour cream, cottage cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper until smooth.
3. Fold in shredded chicken and chopped parsley until well coated.
4. Spread the mixture into the prepared baking dish and top with mozzarella cheese.
5. Combine crushed Ritz crackers with melted butter in a separate bowl and sprinkle evenly over the top.
6. Bake for 30–35 minutes until golden and bubbly. Let rest 10 minutes before serving.
Notes
Use room temperature cream cheese for smoother mixing.
Rotisserie chicken works great in this recipe.
Add steamed broccoli or green chiles for extra flavor.
To freeze: wrap unbaked casserole and freeze for up to 3 months.
