Description

This no water chicken soup recipe is rich in flavor and naturally made without added broth. It’s a one-pot comfort meal you’ll love all year.


Ingredients

2.5 pounds bone-in, skin-on chicken thighs

1 tablespoon olive oil

1 medium yellow onion, diced

3 large carrots, peeled and chopped

3 celery stalks, chopped

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

Fresh parsley or dill (optional)


Instructions

1. Heat olive oil in a Dutch oven and sear chicken until golden brown on both sides.

2. Remove chicken, add onion, carrots, and celery. Sauté until softened. Add garlic and cook 1 more minute.

3. Add herbs, return chicken to pot, and place bay leaf on top.

4. Cover tightly and simmer on low for 60–70 minutes without lifting the lid.

5. Remove chicken, shred meat, discard bones and skin, then return shredded chicken to the pot. Adjust seasoning and garnish.

Notes

Store in the fridge for 4 days or freeze for 3 months.

Use bone-in chicken for best flavor.

Add a splash of lemon juice to brighten before serving.
