Description
A creamy, comforting one-pot chicken rice casserole made with pantry staples and ready in under an hour. Ideal for weeknight dinners or meal prep.
Ingredients
1 ½ pounds boneless skinless chicken thighs, cut into chunks
1 cup long-grain white rice, rinsed
1 medium yellow onion, finely diced
2 garlic cloves, minced
2 ¼ cups low-sodium chicken broth
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
½ teaspoon paprika
1 teaspoon dried thyme
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
1 cup frozen peas and carrots
¾ cup shredded cheddar cheese
Fresh parsley, chopped for garnish
Instructions
1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
2. In a skillet, heat olive oil and sauté onions for 3 minutes, then add garlic and cook 1 more minute.
3. In baking dish, combine onion mix, rice, soups, broth, and spices. Mix well.
4. Stir in vegetables and evenly place chicken chunks on top.
5. Cover tightly with foil and bake for 45 minutes.
6. Remove foil, top with cheese, and bake uncovered for 10–15 more minutes.
7. Let rest 10 minutes before serving. Garnish with parsley.
Notes
Thaw frozen vegetables and chicken before baking.
To reheat, microwave with a splash of broth or rewarm in oven at 325°F.
Best with long-grain rice. Avoid quick-cook varieties.
