Description
Creamy one-pot chicken wild rice soup made with tender chicken, hearty wild rice, and aromatic vegetables simmered in a savory broth. A cozy and filling soup for busy nights or batch cooking.
Ingredients
1 tablespoon olive oil
1 tablespoon butter
1 medium yellow onion, diced
2 medium carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 bay leaf
1/2 teaspoon black pepper
1 teaspoon salt, or to taste
1 cup uncooked wild rice
6 cups chicken broth
1.5 pounds boneless skinless chicken thighs or breasts
1 cup heavy cream or half-and-half
1 tablespoon lemon juice
1 cup sliced mushrooms (optional)
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened. Stir in garlic and cook for 1 additional minute.
2. Add thyme, rosemary, bay leaf, salt, pepper, and wild rice. Stir for 1 minute to toast the rice and blend flavors.
3. Pour in chicken broth and lemon juice. Add chicken pieces and bring the soup to a boil. Reduce to a simmer, cover, and cook for 35 minutes.
4. Remove chicken, shred with forks, and return it to the pot. Simmer uncovered for 10–15 minutes until the rice is fully tender.
5. Stir in cream and mushrooms (if using) over low heat. Warm through for 5 minutes. Remove bay leaf, adjust seasoning, and garnish with parsley before serving.
Notes
For dairy-free, substitute oat milk or coconut milk.
Use pre-cooked chicken if preferred, just add during the final 10 minutes.
Freeze before adding cream for best results.
Add vegetables like spinach, corn, or peas to customize.
