Description
These oven baked creamy chicken taquitos are crispy on the outside and loaded with cheesy chicken filling inside. Perfect for dinner, parties, or snacks.
Ingredients
2 cups cooked shredded chicken breast
4 oz cream cheese, softened
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup salsa verde or red salsa
1/4 tsp garlic powder
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp salt
12 small tortillas (corn or flour)
Cooking spray or olive oil
Instructions
1. Preheat oven to 425°F. Line baking sheet with parchment and spray lightly.
2. In a bowl, mix cream cheese, cheeses, sour cream, salsa, and spices.
3. Fold in shredded chicken until fully combined.
4. Warm tortillas slightly to prevent cracking.
5. Spoon 2–3 tbsp of filling into each tortilla and roll tightly.
6. Place seam-side down on baking sheet and spray or brush with oil.
7. Bake for 18–22 minutes until golden and crisp. Serve warm.
Notes
Use rotisserie or leftover chicken to save time.
Freeze before baking for an easy prep-ahead meal.
Add chopped green chiles for extra flavor.
