Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, sliced
2 celery stalks, chopped
8 cups low-sodium chicken broth
3 cups cooked chicken, shredded
2 cups wide egg noodles
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
2. Add garlic, thyme, parsley, salt, and pepper. Stir for 30 seconds.
3. Pour in chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
4. Add shredded chicken and noodles. Simmer 8–10 minutes until noodles are tender.
5. Taste and adjust salt. Stir in lemon juice before serving, if using.
Notes
Use leftover or rotisserie chicken for quicker prep.
Add lemon juice at the end to brighten the flavor.
For meal prep, cook and store noodles separately to avoid sogginess.
