2 pounds chicken pieces thighs and drumsticks

2 cups buttermilk

1 tablespoon hot sauce

2 cups all purpose flour

1 tablespoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon dried oregano

oil for frying


Instructions

1. In a large bowl combine buttermilk and hot sauce. Add chicken pieces and coat well. Cover and refrigerate for at least 4 hours or overnight.

2. In another bowl mix flour with paprika garlic powder onion powder cayenne salt pepper thyme and oregano.

3. Remove chicken from marinade and let excess drip off. Dredge each piece in the seasoned flour pressing lightly to create a thick coating.

4. Heat oil in a deep pan to 350°F. Carefully place chicken into the hot oil and fry in batches until golden brown and fully cooked about 12 to 15 minutes.

5. Remove chicken and place on a rack or paper towel lined plate. Let it rest for a few minutes before serving.

Notes

Marinate chicken long enough for tender juicy texture.

Keep oil temperature steady to maintain crisp coating.

Do not overcrowd the pan during frying.
