Ingredients
12 oz lo mein noodles or spaghetti
1 lb boneless, skinless chicken breasts, thinly sliced
2 cups fresh broccoli florets
3 tbsp sesame oil (divided: 1 tbsp for noodles, 2 tbsp for cooking)
2 cloves garlic, minced
1 tbsp fresh ginger, minced
1/4 cup low-sodium soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
1 tbsp rice vinegar
1 tsp cornstarch
1/4 cup chicken broth or water
1 tsp chili flakes (optional, for heat)
1/2 cup green onions, sliced, for garnish
1 tbsp toasted sesame seeds for topping
Instructions
1. Bring a large pot of salted water to a boil. Cook the noodles for 5 to 6 minutes or until al dente. Drain, rinse with cold water, and toss with 1 tablespoon sesame oil. Set aside.
2. In a large skillet or wok, heat 1 tablespoon sesame oil over medium-high heat. Add sliced chicken breast and cook for 4 to 5 minutes until fully cooked and golden brown.
3. Add garlic and ginger to the skillet. Stir-fry for 30 seconds until fragrant. Add broccoli and cook for 2 to 3 minutes until bright green and slightly tender.
4. In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, cornstarch, and chicken broth to form the sauce.
5. Pour the sauce into the skillet with the chicken and broccoli. Stir to coat evenly. Add the cooked noodles and toss everything together until noodles are fully coated.
6. Top with sliced green onions and toasted sesame seeds. Serve hot.
Notes
You can substitute chicken with shrimp, beef, or tofu.
Add extra vegetables like bell peppers or mushrooms for more variety.
Use spiralized zucchini for a low-carb noodle option.
To make it spicier, add a spoonful of chili paste or sriracha.
Toast sesame seeds in a dry pan for 1-2 minutes to enhance their flavor.
Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a skillet with a splash of broth.
