Description
Slow cooker chicken noodle soup is the ultimate comfort food, filled with tender chicken, soft noodles, and savory vegetables that simmer all day for rich, homemade flavor.
Ingredients
1.5 lbs boneless, skinless chicken breasts
3 carrots, peeled and sliced
2 celery stalks, chopped
1 small onion, diced
3 cloves garlic, minced
6 cups low-sodium chicken broth
1 tsp dried thyme
1 tsp parsley
Salt and pepper to taste
2 cups egg noodles
Optional: bay leaf, turmeric
Instructions
1. Add chicken, carrots, celery, onion, garlic, and herbs to slow cooker.
2. Pour in chicken broth and stir.
3. Cook on low for 6–7 hours or high for 3–4 hours.
4. Remove chicken, shred with forks, and return to pot.
5. Stir in egg noodles and cook an additional 20–30 minutes until tender.
6. Taste and adjust seasoning as needed. Serve warm.
Notes
Add noodles at the end to prevent mushiness.
For freezing, store without noodles and add them fresh after reheating.
Store in fridge up to 4 days.
