Ingredients
3 cups cooked shredded chicken (about 1 pound)
1/2 cup buffalo sauce
4 ounces cream cheese, softened
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
4 large 10-inch flour tortillas
1/2 cup ranch dressing
2 tablespoons chopped green onions
2 tablespoons unsalted butter or neutral oil
Instructions
1. In a medium bowl, combine shredded chicken, buffalo sauce, and softened cream cheese. Stir until creamy and evenly mixed.
2. Lay one tortilla flat and sprinkle 1/4 cup Monterey Jack and 1/4 cup cheddar over half of the tortilla. Spread about 3/4 cup buffalo chicken mixture evenly on top. Add a light sprinkle of cheese and fold the tortilla in half.
3. Heat 1 tablespoon butter or oil in a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for 3 to 4 minutes until golden and crisp.
4. Flip carefully and cook another 3 to 4 minutes until the cheese melts completely and the tortilla turns golden.
5. Repeat with remaining tortillas, adding more butter or oil as needed.
6. Let the quesadillas rest for 1 minute before slicing. Drizzle with ranch dressing and garnish with chopped green onions before serving.
Notes
Do not overfill the tortillas to prevent leaking.
Cook over medium heat so the cheese melts before the tortilla browns too quickly.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat in a skillet or air fryer to restore crispiness.
