Ingredients
1.5 pounds boneless, skinless chicken breasts, sliced 2 tablespoons olive oil, divided 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon smoked paprika 1 teaspoon kosher salt ½ teaspoon black pepper 2 tablespoons unsalted butter 3 cloves garlic, minced 1 yellow onion, diced 1½ pounds Yukon Gold potatoes, peeled and chopped 1¼ cups low-sodium chicken broth 1 cup milk (whole or 2%) 1 cup shredded smoked gouda cheese ½ teaspoon dried thyme ¼ teaspoon red pepper flakes (optional) 2 tablespoons fresh parsley, chopped
Instructions
1. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season chicken and sear until golden and cooked through. Remove and set aside. 2. In the same skillet, melt butter with remaining oil. Sauté onions and garlic until soft. 3. Add potatoes, broth, thyme, and red pepper flakes. Cover and simmer for 15–18 minutes. 4. Mash potatoes in the skillet. Stir in milk and gouda until creamy. Adjust seasoning. 5. Return chicken to skillet, spoon potatoes over top, and warm through. Garnish and serve.
Notes
Use freshly shredded gouda for best melt. Add a splash of broth or milk when reheating. Pairs well with green beans, salads, or crusty bread.
