Southwest Chicken Salad Lettuce Cups are fresh, flavorful, and packed with tender seasoned chicken, crisp vegetables, and creamy chipotle dressing. This easy chicken chopped salad makes the perfect summer recipes dinner that feels light yet satisfying.
Ingredients
1.5 pounds boneless skinless chicken breasts
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
3 cups romaine lettuce finely chopped
1 cup cooked corn kernels
1 cup black beans drained and rinsed
1 cup cherry tomatoes halved
1/3 cup red onion finely diced
1 cup shredded cheddar cheese
1/4 cup fresh cilantro chopped
3/4 cup plain Greek yogurt
1/4 cup mayonnaise
1 to 2 chipotle peppers in adobo sauce finely minced
1 tablespoon adobo sauce
2 tablespoons fresh lime juice
1 teaspoon honey
1/2 teaspoon salt for dressing
12 large butter lettuce leaves
Instructions
1. Pat the chicken dry and rub with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Let sit for 10 minutes.
2. Heat a skillet over medium heat and cook the chicken for 6 to 7 minutes per side until fully cooked. Rest for 5 minutes, then chop into bite sized pieces.
3. In a medium bowl whisk together Greek yogurt, mayonnaise, minced chipotle peppers, adobo sauce, lime juice, honey, and salt until smooth.
4. In a large bowl combine chopped romaine, corn, black beans, cherry tomatoes, red onion, cheddar cheese, cilantro, and chopped chicken.
5. Pour half of the creamy chipotle dressing over the salad and toss gently to coat. Add more dressing as desired.
6. Spoon the chicken chopped salad mixture into butter lettuce leaves and drizzle with extra dressing. Serve immediately.
Notes
Store salad and dressing separately for up to 3 days in the refrigerator.
Adjust spice level by adding more or less chipotle pepper.
For meal prep, keep lettuce leaves separate until serving.
If dressing thickens in the refrigerator, stir in a small splash of water or lime juice to loosen.
