Ingredients
3 cups cooked shredded chicken
1 package (8 ounces) cream cheese, softened
1 can (10 ounces) diced tomatoes with green chilies, drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) sweet corn, drained
1 packet (1 ounce) ranch seasoning mix
1 cup shredded cheddar cheese (or Mexican blend)
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon chili powder (optional)
1 tablespoon chopped fresh cilantro (for garnish)
Optional: 3 cups cooked rice or 8 ounces cooked pasta for serving
Instructions
1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a saucepan, melt cream cheese with chicken broth over medium heat until smooth.
3. Stir in ranch seasoning, garlic powder, onion powder, and chili powder.
4. Add shredded chicken, beans, corn, and diced tomatoes. Mix until fully coated.
5. Pour into baking dish, top with cheese, and bake uncovered for 25 to 30 minutes until bubbly.
6. Garnish with cilantro and serve with rice, chips, or tortillas.
Notes
Drain all canned ingredients well to avoid excess moisture.
For a spicy kick, add chopped jalapeños or more chili powder.
