Ingredients
6 bone-in, skin-on chicken thighs (about 2.5 pounds)
2 tablespoons smoked paprika
1 teaspoon sweet paprika
4 cloves garlic, minced
1 teaspoon chili flakes
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper or lightly grease a baking dish.
2. In a small bowl, mix smoked paprika, sweet paprika, minced garlic, chili flakes, salt, black pepper, lemon juice, lemon zest, and olive oil until a paste forms.
3. Pat chicken thighs completely dry with paper towels.
4. Rub the spice mixture evenly over each chicken thigh, including under the skin for deeper flavor.
5. Place thighs skin side up on the baking sheet, leaving space between each piece.
6. Bake for 35 to 40 minutes or until internal temperature reaches 165 degrees Fahrenheit.
7. Let rest for 5 to 10 minutes before serving.
8. Garnish with chopped fresh parsley and serve.
Notes
For extra crispy skin, broil for 2 to 3 minutes at the end of cooking.
