1/2 cup buffalo sauce

1/2 cup plain Greek yogurt

1 tablespoon ranch seasoning mix

3 garlic cloves, minced

1/2 cup yellow onion, finely diced

1 teaspoon cornstarch

1 tablespoon water

12 large butter lettuce leaves

2 tablespoons green onions, sliced

2 tablespoons fresh parsley, chopped

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a bowl, whisk together buffalo sauce, Greek yogurt, and ranch seasoning until smooth.

2. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook for 5 to 7 minutes until golden and fully cooked.

3. Stir in diced onion and minced garlic. Cook for 2 minutes until softened and fragrant.

4. Pour the buffalo ranch mixture into the skillet and stir to coat the chicken evenly. Simmer for 3 to 4 minutes.

5. Mix cornstarch with water and stir into the skillet. Cook for 1 to 2 minutes until the sauce thickens slightly.

6. Spoon the buffalo chicken mixture into butter lettuce leaves. Garnish with green onions and parsley. Serve immediately.

Notes

For milder heat, reduce buffalo sauce to 1/3 cup.

Store cooked chicken separately from lettuce for up to 4 days in the refrigerator.

Reheat gently and add a splash of water if sauce thickens too much.
