Description
This spicy southwest chicken veggie wrap is loaded with juicy chicken, colorful veggies, and creamy chipotle sauce, all wrapped up in a warm tortilla. A quick, healthy lunch or dinner ready in under 30 minutes.
Ingredients
2 cups cooked chicken breast, diced or shredded
1 tablespoon olive oil
1 tablespoon southwest seasoning
1 cup canned black beans, rinsed and drained
1 cup canned corn, drained
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1/2 cup red onion, thinly sliced
1 cup chopped romaine or spinach
1/4 cup fresh cilantro (optional)
4 large 10-inch flour tortillas
1/3 cup plain Greek yogurt or mayonnaise
1 tablespoon lime juice
1 teaspoon chipotle or chili powder
Salt and pepper to taste
Instructions
1. Heat olive oil in a pan and cook chicken with southwest seasoning for 4–5 minutes until warm.
2. Mix Greek yogurt, lime juice, chipotle powder, and salt in a bowl to make sauce.
3. Warm tortillas for 10–15 seconds to soften.
4. Layer romaine, chicken, beans, corn, peppers, onions, and sauce on each tortilla.
5. Roll up tightly, slice, and serve warm or cold.
Notes
Wraps can be made ahead for lunch prep.
Store wrapped tightly for up to 3 days.
Add avocado or shredded cheese for extra richness.
