Description
A bold, creamy, and satisfying Spicy Street Corn Chicken Bowl made with lean chicken, grilled corn, and a quick lime crema. Perfect for meal prep or fast weeknight dinners.
Ingredients
1 pound boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
1½ teaspoons chili powder
1 teaspoon smoked paprika
½ teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 cups cooked white or brown rice
1½ cups grilled corn kernels
⅓ cup sour cream
⅓ cup mayonnaise
1 tablespoon lime juice
¼ cup cotija cheese, crumbled
1 jalapeño, finely diced
2 tablespoons chopped cilantro
½ teaspoon ground cumin
½ teaspoon onion powder
Lime wedges for serving
Instructions
1. Toss chicken with chili powder, paprika, garlic powder, salt, and pepper.
2. Heat olive oil in skillet and cook chicken strips until browned and fully cooked.
3. Mix sour cream, mayonnaise, lime juice, cumin, onion powder, and a pinch of salt in a bowl for crema.
4. Char corn kernels in skillet for 4–5 minutes until golden, then mix with half the cotija.
5. Build each bowl with rice, chicken, corn, crema, jalapeños, cilantro, cheese, and lime.
Notes
Char corn well for authentic flavor.
Make crema ahead and store for 3 days.
Use cauliflower rice for a low-carb version.
