Description
This quick and flavorful Sweet Garlic Pineapple Chicken with Rice brings together juicy chicken, fresh pineapple, and a garlicky soy glaze—all in one skillet.
Ingredients
1½ pounds boneless skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
1½ cups fresh pineapple chunks
½ cup pineapple juice
¼ cup low-sodium soy sauce
3 tablespoons honey
4 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons cold water
4 cups cooked jasmine rice
2 green onions, sliced (optional)
¼ teaspoon red pepper flakes (optional)
Instructions
1. Heat olive oil in a skillet over medium-high heat. Sear chicken in a single layer for 6–8 minutes until golden. Remove and set aside.
2. In a bowl, whisk pineapple juice, soy sauce, honey, and garlic.
3. Pour the sauce into the same skillet and bring to a simmer.
4. Mix cornstarch with water and stir into the sauce to thicken.
5. Add chicken and pineapple. Stir to coat. Cook 2–3 more minutes.
6. Serve hot over jasmine rice. Garnish with green onions if desired.
Notes
Use canned pineapple in juice if fresh isn’t available.
Add red pepper flakes for mild heat.
Store leftovers in fridge up to 4 days.
