Ingredients

1.5 pounds boneless, skinless chicken thighs (trimmed)

1 cup jasmine or basmati rice (rinsed and drained)

1 cup low-sodium chicken broth

1/2 cup low-sodium soy sauce

1/3 cup honey

1/4 cup rice vinegar

2 tablespoons sesame oil

1 tablespoon freshly grated ginger

3 garlic cloves (minced)

2 tablespoons cornstarch + 2 tablespoons water (for slurry)

1 cup chopped carrots

1 red bell pepper (sliced)

1/2 cup frozen peas

2 green onions (sliced, for garnish)

1 tablespoon sesame seeds (optional, for garnish)


Instructions

1. Place chicken thighs at the bottom of your crockpot.

2. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Pour over the chicken.

3. Add rinsed rice, chicken broth, carrots, and bell pepper on top. Gently stir to combine.

4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.

5. About 30 minutes before serving, stir in frozen peas and cornstarch slurry. Cook uncovered for the last 15 minutes.

6. Fluff the rice and shred the chicken slightly before serving. Garnish with green onions and sesame seeds.

Notes

To avoid gummy rice, always rinse before adding it to the slow cooker.

This meal reheats beautifully and can be frozen in meal prep portions.

Adjust the sweetness by using less honey if desired or add pineapple chunks for variation.
