Ingredients
2 cooked skinless chicken breasts, shredded
2 cups mixed lettuce or spinach
1/2 cucumber, diced
10 cherry tomatoes, halved
1/4 red onion, finely sliced
1/4 red pepper, sliced
1/2 tsp garlic granules
Juice of half a lemon
2 tbsp fat-free Greek yogurt
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
1. Shred the cooked chicken and place it in a mixing bowl.
2. Add chopped lettuce, tomatoes, cucumber, onion, and red pepper.
3. In a small bowl, combine yogurt, mustard, lemon juice, garlic, salt, and pepper.
4. Pour the dressing over the salad and mix thoroughly to coat everything.
5. Chill for 15 minutes before serving for best flavor.
Notes
Optional: Add chopped fresh herbs like parsley or dill.
Serve in lettuce wraps, pita bread (HEB), or over couscous for variation.
