Ingredients
4 boneless, skinless chicken breasts (about 2 pounds)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon kosher salt
½ teaspoon black pepper
1 cup barbecue sauce
1½ cups shredded sharp cheddar cheese
½ cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
2 sliced green onions (optional)
Instructions
1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
2. Pat the chicken dry, brush with olive oil, and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
3. Arrange the chicken in the baking dish and bake for 20 minutes.
4. Remove from the oven and spread barbecue sauce evenly over each chicken breast.
5. Top with cheddar and mozzarella cheese.
6. Return to the oven for 8 to 10 minutes until the chicken reaches 165°F and the cheese is melted and bubbly.
7. Rest for 5 minutes before garnishing with parsley and green onions, then serve.

Freshly shredded cheese melts better than pre-shredded cheese.
