Description
A baked chicken macaroni casserole with a creamy cheddar and Monterey Jack sauce flavored with garlic, Dijon mustard, lemon, fresh herbs, smoked paprika, red pepper flakes, and cayenne. A buttery panko topping gives the creamy pasta a crisp finish.
Ingredients
1½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
12 ounces elbow macaroni
1 tablespoon olive oil
½ teaspoon kosher salt
½ teaspoon black pepper
5 tablespoons unsalted butter, divided
4 garlic cloves, finely minced
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
½ teaspoon crushed red pepper flakes
¼ teaspoon cayenne pepper
1 teaspoon finely grated lemon zest
1½ tablespoons fresh lemon juice
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
3 tablespoons all-purpose flour
2½ cups whole milk
2 cups freshly shredded sharp cheddar cheese
1 cup freshly shredded Monterey Jack cheese
½ cup freshly grated Parmesan cheese
¾ cup panko breadcrumbs
1 tablespoon melted butter
1 tablespoon chopped parsley for finishing, optional
Instructions
1. Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish. Bring a large pot of salted water to a boil. Cook the elbow macaroni 1 to 2 minutes less than the package’s al dente time, then drain. Keep the pasta slightly firm because it will continue cooking in the oven.
2. Season the chicken pieces with ½ teaspoon kosher salt and ½ teaspoon black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 6 to 8 minutes, turning as needed, until browned and the thickest pieces reach 165°F. Transfer the chicken to a plate without wiping out the skillet.
3. Reduce the heat to medium and melt 4 tablespoons of the butter in the skillet. Stir in the minced garlic, Dijon mustard, smoked paprika, crushed red pepper flakes, and cayenne. Cook for 30 to 60 seconds, stirring constantly, just until the garlic becomes fragrant. Do not let the garlic turn dark brown.
4. Stir the lemon zest, lemon juice, parsley, and chives into the butter mixture. Add the remaining 1 tablespoon butter, then sprinkle in the flour. Stir continuously for about 1 minute until no dry flour remains.
5. Gradually pour in the whole milk while whisking. Continue cooking over medium heat until the sauce thickens enough to lightly coat the back of a spoon. Reduce the heat to low before adding the cheese.
6. Add the cheddar, Monterey Jack, and Parmesan a handful at a time, stirring after each addition until melted and smooth. Do not let the sauce boil after adding the cheese. Taste before adding any additional salt.
7. Return the cooked chicken to the skillet and add the drained macaroni. Fold gently until the chicken is distributed evenly and every noodle is coated. If the mixture looks unusually thick, stir in a small splash of milk before transferring it to the baking dish.
8. Spread the chicken macaroni mixture evenly in the prepared 9-by-13-inch dish. Combine the panko with 1 tablespoon melted butter and scatter the crumbs evenly over the surface.
9. Bake at 375°F for about 15 minutes, until the sauce bubbles around the edges and the center is thoroughly hot. If the crumbs need more color, broil briefly at the end while watching continuously so the panko does not burn.
10. Remove the casserole from the oven and let it rest for 5 to 10 minutes before serving. Finish with chopped parsley if desired. The short rest allows the cheese sauce to settle while keeping the macaroni creamy.
Notes
Heat level: The combination of ½ teaspoon crushed red pepper flakes and ¼ teaspoon cayenne gives the casserole a noticeable kick. For a milder result, reduce the cayenne first rather than removing the lemon, herbs, or smoked paprika.
Chicken thighs: Boneless, skinless chicken thighs can replace the breasts. Cut them into similar 1-inch pieces and cook them fully before combining them with the pasta.
Cheese: Freshly shredded cheese generally incorporates more smoothly into the sauce. Add it over low heat and avoid boiling the sauce after the cheese has melted.
Pasta texture: Do not fully cook the macaroni during the boiling stage. It continues cooking after the casserole goes into the oven, so slightly firm pasta helps prevent a soft final texture.
Sauce too thick: If the macaroni absorbs too much sauce before baking, stir in a small splash of milk. Add it gradually rather than making the mixture watery.
Make ahead: Assemble the macaroni, chicken, and cheese sauce in the baking dish and refrigerate covered. Keep the buttered panko separate and add it just before baking so it stays dry enough to crisp.
Storage: Cool leftovers and refrigerate them in a covered container for 3 to 4 days.
Reheating: Add a small spoonful of milk before reheating because the pasta continues absorbing sauce in the refrigerator. Cover larger portions and warm them in a 350°F oven until heated through. Microwave individual portions in shorter intervals, stirring when practical.
Freezing: Refrigeration gives this dairy-heavy casserole the more predictable texture. Cheese sauces can change consistency after freezing and thawing.
