Ingredients
2 cups cooked chicken breast, shredded or diced
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1/4 cup fresh basil, finely chopped
1/4 cup plain yogurt or light mayo
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup diced cucumber
1/4 cup cherry tomatoes, halved
2 tablespoons finely chopped red onion
Instructions
1. Prepare the chicken by shredding or dicing cooked chicken breast into small bite-sized pieces for even mixing.
2. In a medium bowl, whisk together lemon juice, lemon zest, yogurt or mayo, and olive oil until smooth and creamy.
3. Add the shredded chicken, chopped basil, diced cucumber, halved cherry tomatoes, and red onion into the bowl.
4. Gently mix everything together until all ingredients are evenly coated with the dressing without breaking the chicken pieces.
5. Taste and adjust seasoning by adding salt and black pepper as needed.
6. Cover and refrigerate the salad for at least 20 minutes to allow the flavors to blend and the texture to become more refreshing.
7. Serve chilled in lettuce wraps, sandwiches, or over a bed of greens depending on your preference.
