Ingredients
2 cups cooked chicken, shredded
1/2 cup BBQ sauce
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
4 slices sandwich bread
2 tablespoons butter
Instructions
1. In a bowl, mix the shredded chicken with BBQ sauce until evenly coated and moist.
2. Spread butter on one side of each bread slice. On the unbuttered side, layer mozzarella cheese, BBQ chicken mixture, and cheddar cheese.
3. Place the second slice of bread on top with the buttered side facing outward.
4. Heat a pan over medium heat and place the sandwich in the pan.
5. Cook slowly for 3 to 4 minutes until the bread turns golden and crisp, then flip carefully.
6. Cook the other side until golden and the cheese inside is fully melted.
7. Remove from the pan, let it rest briefly, then slice and serve.
