Ingredients
2 large chicken breasts, cut into bite-sized pieces
3 medium potatoes, diced into small cubes
2 tablespoons olive oil
1/2 cup BBQ sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat a large skillet over medium heat and add olive oil.
2. Add diced potatoes in a single layer and cook without stirring for a few minutes until golden on one side, then stir occasionally until crispy outside and tender inside.
3. Push potatoes to one side and add chicken pieces to the skillet, letting them sear for a few minutes before stirring.
