Ingredients
4 boneless chicken thighs
1 cup pineapple juice
1/2 cup BBQ sauce
1/4 cup soy sauce
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon black pepper
Instructions
1. In a bowl, mix pineapple juice, BBQ sauce, soy sauce, honey, minced garlic, grated ginger, and black pepper until smooth.
2. Place the chicken thighs in a single layer at the bottom of the crock pot.
3. Pour the prepared sauce over the chicken, making sure each piece is fully coated.
4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
5. Once cooked, lightly shred the chicken or leave whole depending on preference.
6. Let the chicken sit in the sauce for a few minutes to allow it to thicken slightly before serving.
Notes
For a thicker sauce, cook uncovered during the last 20 to 30 minutes.
