Description

These Cheesy Chicken and Broccoli Calzones combine tender shredded chicken, fresh broccoli, and three kinds of cheese inside a golden homemade pizza crust. They’re perfect for weeknight dinners, meal prep, or freezing for later, delivering a crispy exterior with a rich, creamy filling every time.

Ingredients

Scale

1 pound pizza dough

2 cups cooked shredded chicken

2 cups finely chopped broccoli florets

1½ cups shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

4 ounces cream cheese, softened

2 tablespoons sour cream

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon onion powder

½ teaspoon paprika

Salt and black pepper to taste

1 egg, beaten

1 tablespoon grated Parmesan cheese

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Blanch the broccoli for 2 to 3 minutes, drain well, and pat dry completely.

3. Mix the chicken, broccoli, mozzarella, cheddar, cream cheese, sour cream, garlic, Italian seasoning, onion powder, paprika, salt, and pepper until evenly combined.

4. Divide the pizza dough into four portions and roll each into an 8-inch circle.

5. Place filling on one half of each dough circle, leaving a border around the edge.

6. Fold the dough over the filling, seal firmly, and crimp the edges with a fork.

7. Cut two small slits in the top of each calzone, brush with beaten egg, and sprinkle with Parmesan cheese.

8. Bake for 20 to 25 minutes until deeply golden brown.

9. Cool for 5 minutes before serving with marinara, ranch, or your favorite dipping sauce.

Notes

Dry the broccoli well before mixing to prevent a watery filling.

Avoid overfilling the dough so the seams stay sealed during baking.

Allow the calzones to rest for 5 minutes before cutting to keep the cheese inside.

Freeze baked or unbaked calzones for easy future meals.

Reheat in the oven or air fryer for the crispiest texture.
