Ingredients
2 chicken breasts, sliced into strips
2 cups cooked rice
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and black pepper to taste
Optional toppings
1 cup black beans, drained
1 cup corn kernels
1 avocado, sliced
Instructions
1. Heat olive oil in a pan over medium heat and cook chicken strips until lightly golden and fully cooked, then remove and set aside.
2. In the same pan, cook sliced bell peppers and onion until slightly softened but still crisp.
3. Return chicken to the pan and add chili powder, smoked paprika, cumin, salt, and pepper.
4. Stir everything together and cook for a few more minutes so the flavors blend.
5. Prepare bowls with cooked rice as the base.
6. Top with chicken and fajita vegetables.
7. Add optional toppings like black beans, corn, and avocado.
