Ingredients
2 cups cooked chicken breast, shredded
1 cup cottage cheese
2 cups celery, finely chopped
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Chop the celery, cucumber, and red onion into small, even pieces and place them into a large mixing bowl.
2. Add the shredded chicken to the bowl and spread it evenly over the vegetables.
3. Add cottage cheese, lemon juice, and olive oil, then gently mix to coat the chicken and begin forming a creamy base.
4. Add chopped parsley and fold everything together slowly until evenly combined without breaking the texture.
5. Season with salt and black pepper, mix gently one last time, and serve immediately or chill briefly before serving.
