Description
Creamy Roasted Red Pepper Chicken Skillet with tender chicken in a smooth, flavorful roasted pepper cream sauce. Easy, rich, and perfect for a quick dinner.
Ingredients
2 large chicken breasts, sliced
1 cup roasted red peppers, chopped
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp paprika
1 tsp Italian seasoning
salt and black pepper to taste
fresh parsley for garnish
Instructions
1. Heat olive oil in a skillet over medium heat and cook the chicken until golden and fully cooked, then remove and let it rest before slicing
2. In the same pan, melt butter and cook garlic briefly until fragrant, then add roasted red peppers and stir for about a minute
3. Pour in chicken broth and simmer lightly while scraping the bottom of the pan to bring out extra flavor
4. Add heavy cream and stir gently, keeping the heat medium-low so the sauce stays smooth
5. Add Parmesan gradually while stirring until the sauce becomes creamy and well combined
6. Return the chicken to the skillet and let it simmer in the sauce for a few minutes so it absorbs flavor
7. Taste and adjust seasoning, then garnish with fresh parsley before serving
Notes
Keep the heat moderate when adding cream and cheese to prevent the sauce from separating or becoming grainy
If the sauce gets too thick, add a splash of broth or cream and stir until it loosens to the right consistency
Let the chicken rest before slicing so it stays juicy and doesn’t lose moisture
When reheating, add a little liquid and warm slowly while stirring to keep the sauce smooth
