Ingredients
2 chicken breasts, cut into bite-sized pieces
1 cup orzo pasta
1 cup heavy cream
2 cups chicken broth
4 garlic cloves, minced
1/2 cup parmesan cheese, grated
2 cups fresh spinach
1/2 cup sun-dried tomatoes
1 teaspoon Italian seasoning
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pan and cook chicken pieces until lightly golden, then remove and set aside.
2. In the same pan, add garlic and cook briefly until fragrant.
3. Pour in chicken broth and stir to release any browned bits from the pan.
4. Add orzo pasta and let it simmer, stirring occasionally until it absorbs most of the liquid.
5. Pour in heavy cream and add sun-dried tomatoes and Italian seasoning, stirring gently.
6. Return chicken to the pan and add spinach, cooking until wilted.
7. Stir in parmesan cheese and let the dish rest for a few minutes until the sauce thickens.
Notes
Stir orzo occasionally to prevent sticking.
Add cream after orzo softens for better texture.
Reheat with a splash of broth or cream to keep it smooth.
