Ingredients
2 chicken breasts, cut into bite-sized pieces
2 cups cooked rice
1/2 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon hot sauce
1 tablespoon honey
1 teaspoon garlic powder
Salt and black pepper to taste
1 avocado, sliced
Instructions
1. Cut chicken into even bite-sized pieces and season with salt and pepper.
2. Prepare three bowls with flour, beaten eggs, and breadcrumbs.
3. Coat each chicken piece in flour, then egg, then breadcrumbs, pressing gently.
4. Heat oil in a pan over medium heat and cook chicken in batches until golden and fully cooked.
5. In a bowl, mix mayonnaise, sweet chili sauce, hot sauce, honey, and garlic powder until smooth.
6. Lightly toss cooked chicken in the sauce or drizzle sauce over the top.
7. Prepare bowls with cooked rice as the base.
8. Add crispy chicken and sliced avocado on top and serve immediately.
Notes
Do not overcrowd the pan for proper crispiness.
Add sauce after cooking to keep coating crunchy.
