Ingredients

2 chicken breasts or thighs

1 cup uncooked rice

2 cups broth

1 onion soup mix

1 large onion

2 tbsp butter

1 tbsp olive oil

1/2 cup cheese

salt and pepper


Instructions

1. Heat butter and oil over medium heat and cook sliced onions for 10–12 minutes until soft and lightly caramelized

2. Spread uncooked rice evenly in a baking dish and pour in broth, then sprinkle onion soup mix over the top

3. Add cooked onions evenly across the dish so the flavor spreads throughout

4. Place chicken on top and season lightly with salt and pepper

5. Cover tightly and bake at 375°F for 35–40 minutes until rice is tender and most liquid is absorbed

6. Check the rice texture; if needed, add a splash of broth and continue baking covered

7. Uncover, add cheese, and bake for another 5 minutes until melted

8. Let rest for 5 minutes before serving so the texture sets properly

Notes

Caramelizing the onions properly adds depth and improves the final flavor

Make sure the dish stays covered while baking so the rice cooks evenly

If the rice seems undercooked, add a little broth and continue baking

Reheat with added liquid to prevent the rice from drying out
