Ingredients
2 chicken breasts, sliced horizontally for thinner cutlets
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
3 tablespoons mustard
2 tablespoons honey
1 tablespoon olive oil
1 teaspoon lemon juice
4 sandwich buns
1 cup lettuce
1/2 cup tomato slices
1/4 cup red onion slices
Instructions
1. Slice chicken breasts horizontally to create thinner cutlets for even cooking.
2. Coat chicken with olive oil, salt, black pepper, and garlic powder. Let sit briefly to absorb seasoning.
3. In a small bowl, mix mustard, honey, olive oil, and lemon juice until smooth to form the sauce.
4. Heat grill or grill pan over medium high heat and cook chicken for 4 to 5 minutes per side until fully cooked with light char.
5. Brush honey mustard sauce onto the chicken while still warm so it coats evenly.
6. Lightly toast sandwich buns, then layer lettuce, grilled chicken, tomato slices, and red onion.
