Ingredients
4 small boneless, skinless chicken breasts
3 tablespoons olive oil
2 tablespoons fresh lemon juice

2 large garlic cloves, pressed or finely minced

1 cup fresh blueberries

Instructions
1. Check the chicken breasts for even thickness. If the thick end of a breast is substantially larger than the narrow end, gently pound only the thickest section until the chicken has a more consistent thickness. Do not flatten the breasts into thin cutlets.
2. Pat the chicken dry and arrange it in a baking dish. Whisk together the olive oil, 2 tablespoons lemon juice, zest of 1 lemon, 2 minced garlic cloves, 2 teaspoons fresh thyme, 1 teaspoon kosher salt, and black pepper.
3. Pour the lemon-thyme marinade over the chicken. Turn each breast until coated on both sides. Cover and refrigerate for at least 30 minutes. The chicken can also marinate for several hours in the refrigerator.
4. Preheat the oven to 345°F. Arrange the marinated chicken breasts in the baking dish without stacking or overlapping them. Spoon a little marinade over the surface.

8. Bring the blueberry mixture to a gentle simmer over medium heat. Cook for approximately 5 to 7 minutes, stirring occasionally.
9. As the blueberries soften, gently press some against the side of the saucepan with the back of a spoon. Leave several berries whole so the sauce retains texture.
10. Continue simmering until the liquid reduces slightly and becomes glossy and lightly syrupy. The sauce should remain easy to spoon. If it is too thin, simmer for another minute. If it becomes too thick, stir in a tablespoon of chicken broth.
11. Taste the blueberry thyme sauce before adjusting the seasoning. Add a small amount of honey for additional sweetness, a few drops of balsamic for more acidity, or a pinch of salt and splash of broth for a more savory balance.
12. Place the rested lemon thyme chicken breasts on serving plates. Spoon the warm blueberry thyme sauce over each breast, leaving some of the chicken exposed. Serve additional sauce at the table.

Chicken size: Small chicken breasts cook more evenly. Larger breasts can be used, but gently pound only the thickest portion and expect the baking time to increase.
