Ingredients
2 cups cooked chicken breast, shredded or sliced
1 cup mandarin oranges, drained
2 cups shredded lettuce or cabbage
1/2 cup shredded carrots
1/4 cup sliced almonds
2 tablespoons chopped green onions
1/3 cup light dressing or sesame-style dressing
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare the chicken by shredding or slicing cooked chicken breast into bite-sized pieces.
2. Shred the lettuce or cabbage, grate the carrots, and slice the green onions evenly.
3. Drain the mandarin oranges well and set aside to remove excess moisture.
4. In a bowl, mix the dressing with lemon juice and olive oil until smooth.
5. Add the lettuce or cabbage to a large bowl, then layer chicken, mandarins, carrots, almonds, and green onions on top.
6. Drizzle the dressing over the salad.
7. Gently toss everything together until lightly coated, keeping the ingredients intact.
8. Taste and adjust seasoning with salt and black pepper if needed.
