Ingredients
2 cups cooked chicken breast, shredded or diced
1 cup fresh mango, diced
1/4 cup chopped cucumber
1/4 cup chopped red bell pepper
2 tablespoons chopped red onion
1/3 cup plain yogurt or mayonnaise
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare the chicken by shredding or dicing cooked chicken breast into small bite-sized pieces for even mixing.
2. Dice the mango into small cubes and chop the cucumber, red bell pepper, and red onion into evenly sized pieces.
3. In a bowl, mix yogurt or mayonnaise with lemon juice and olive oil until smooth and creamy.
4. Add the chicken, mango, cucumber, bell pepper, and onion into the bowl.
5. Gently mix everything together until all ingredients are evenly coated with the dressing.
6. Taste and adjust seasoning with salt and black pepper if needed.
7. Cover and refrigerate the salad for about 20 minutes to allow flavors to blend.
8. Serve chilled in lettuce wraps, sandwiches, or over greens.
