A clean and simple paleo chicken salad made with shredded chicken, fresh vegetables, and creamy avocado for a naturally dairy free and satisfying meal.
Ingredients
2 cups cooked chicken breast, shredded
1/2 cup celery, finely chopped
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup chopped fresh parsley
1/2 cup avocado, mashed
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Chop the celery, cucumber, and red onion into small, even pieces and place them into a large mixing bowl.
2. Add the shredded chicken to the bowl and spread it evenly over the vegetables.
3. Add mashed avocado, olive oil, and lemon juice, then gently mix to coat the chicken without breaking it down.
4. Add chopped parsley and fold everything together slowly until evenly combined while keeping some structure.
5. Season with salt and black pepper, mix lightly one last time, and serve immediately or chill briefly before serving.
Notes
Use ripe but firm avocado for best consistency.
Keep ingredients evenly chopped for better mixing.
