Description
Pineapple Chicken Kabobs are juicy, sweet, and slightly smoky with tender chicken and caramelized pineapple. Coated in a glossy honey BBQ glaze, these skewers are simple to make and perfect for a fresh and satisfying meal.
Ingredients
2 large chicken breasts, cut into bite-sized cubes
2 cups fresh pineapple chunks
2 tablespoons olive oil
1/2 cup BBQ sauce
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
wooden or metal skewers
Instructions
1. Place chicken pieces in a bowl, drizzle with olive oil, and season with garlic powder, smoked paprika, salt, and black pepper, tossing until evenly coated.
2. In a separate bowl, mix BBQ sauce and honey until smooth and slightly thick.
3. Thread chicken and pineapple onto skewers, alternating between pieces while keeping them slightly spaced for even cooking.
4. Heat a grill pan or skillet over medium heat and place the skewers in the pan.
5. Cook for 10 to 15 minutes, turning occasionally until chicken is fully cooked and lightly browned.
6. Brush the BBQ honey mixture over the kabobs while cooking, allowing it to caramelize slightly on the surface.
7. Remove from heat and let rest for a couple of minutes before serving so the glaze settles.
Notes
Use fresh pineapple for best texture and caramelization.
Cut chicken pieces evenly for consistent cooking.
Brush sauce gradually during cooking to build a glossy sticky finish.
