Description

Pressure Cooker Frozen Fiesta Chicken Breasts turn individually frozen boneless chicken breasts into a Southwest-inspired dinner finished with salsa, black beans, corn, green chiles, lime, and melted Monterey Jack. Pressure time is based on the size of each frozen breast for more reliable results.

1 cup low-sodium chicken broth

1 tablespoon taco seasoning

½ teaspoon smoked paprika

¼ teaspoon kosher salt

1 cup chunky salsa

1 can (15 ounces) black beans, drained and rinsed

1 cup frozen corn

1 can (4 ounces) diced green chiles, drained

1 tablespoon fresh lime juice

¾ cup shredded Monterey Jack cheese

2 tablespoons chopped fresh cilantro, optional

Diced avocado, optional for serving

Sliced jalapeños, optional for serving

Sour cream, optional for serving

Additional salsa, optional for serving

Lime wedges, optional for serving


Instructions

1. Check the size of the individual frozen chicken breasts before cooking. This recipe’s 12-minute pressure time assumes breasts weighing approximately 6 to 8 ounces each. Use 13 to 14 minutes for 9- to 10-ounce breasts or approximately 16 minutes for 12-ounce breasts.

2. Make sure the frozen chicken breasts are separated. If they are frozen together in a solid block, place them in cool water only until you can separate the individual pieces.

3. Pour 1 cup low-sodium chicken broth into the pressure cooker inner pot and place the trivet inside.

4. Arrange the frozen chicken breasts on the trivet in a single layer. Sprinkle them with taco seasoning, smoked paprika, and kosher salt.

5. Secure the lid and move the pressure valve to Sealing. For 6- to 8-ounce frozen breasts, cook on High Pressure for 12 minutes. Adjust the pressure time according to individual breast size when necessary.

6. When the pressure-cooking cycle ends, leave the cooker untouched for 10 minutes to allow a natural pressure release.

7. After 10 minutes, carefully vent any remaining pressure according to your pressure cooker’s instructions. Wait until the float valve drops before opening the lid.

8. Insert an instant-read thermometer into the thickest section of each chicken breast. Confirm that every breast has reached at least 165°F.

9. Transfer fully cooked chicken to a clean cutting board and let it rest for 5 minutes. If any piece remains under temperature, continue cooking it until it safely reaches 165°F before proceeding.

10. Remove the trivet. Carefully pour off excess cooking broth, leaving approximately ½ cup liquid in the inner pot. Reserve some additional broth in case you need to loosen the finished mixture.

11. Select Sauté. Add the chunky salsa, drained and rinsed black beans, frozen corn, and drained green chiles to the remaining cooking liquid.

12. Cook the fiesta mixture for approximately 2 to 3 minutes, stirring occasionally, until the beans and corn are heated through.

13. Shred the rested chicken with two forks for tacos, burritos, bowls, or quesadillas. Alternatively, leave the breasts whole for plated servings.

14. Return shredded chicken to the pressure cooker and toss gently with the hot salsa, black bean, corn, and chile mixture. If serving whole breasts, spoon the mixture over them instead.

15. Turn off Sauté and stir in the fresh lime juice.

16. Sprinkle the Monterey Jack over the hot chicken. Place the lid loosely on the cooker for approximately 2 minutes, without pressure cooking, until the cheese melts.

17. Finish with chopped cilantro if desired. Serve with avocado, jalapeños, sour cream, additional salsa, or lime wedges.

Notes

Frozen chicken size: Pressure time depends on the weight and thickness of each individual breast rather than the total amount of chicken. Use approximately 11 to 12 minutes for 6- to 8-ounce breasts, 13 to 14 minutes for 9- to 10-ounce breasts, and 16 minutes for 12-ounce breasts.

Natural release: Allow 10 minutes of natural pressure release before venting any remaining pressure.

Frozen block: Do not pressure cook several chicken breasts frozen together in one solid mass. Separate them first so they cook more evenly.

Liquid: Use 1 cup of thin cooking liquid for this recipe. Low-sodium chicken broth adds more flavor than plain water.

Trivet: The chicken cooks on a trivet above most of the broth. If your pressure cooker does not have a trivet, chicken can cook directly in the liquid, although the texture may differ slightly.

Doneness: Always check the thickest section of every breast with an instant-read thermometer. Chicken must reach at least 165°F.

More chicken: Increasing the number of same-size chicken breasts does not automatically require multiplying the pressure time. The pressure cooker may take longer to come to pressure.

Fiesta ingredients: Salsa, black beans, corn, and green chiles go into the cooker after the chicken has pressure cooked. They only need enough time on Sauté to become hot.

Sauce consistency: Leave approximately ½ cup cooking liquid before adding the fiesta ingredients. Simmer briefly if the mixture is too loose, or add reserved broth 1 tablespoon at a time if it becomes too thick.

Shredding: Let the cooked chicken rest for about 5 minutes before shredding. Return it to the sauce only long enough to coat and warm through.

Fresh chicken: Thawed chicken breasts need a shorter pressure time. Do not use the frozen timing automatically.

Spice level: Choose mild, medium, or hot salsa according to preference. Fresh jalapeños can add extra heat at serving.

Storage: Refrigerate cooked fiesta chicken in an airtight container for 3 to 4 days.
