Description
Slow Cooker Parmesan Herb Chicken and Root Vegetables with tender chicken, soft vegetables, and a rich herb parmesan flavor cooked in one pot.
Ingredients
2 lbs chicken
3 cups potatoes
2 cups carrots
1 cup root vegetables
3 tbsp olive oil
3 garlic cloves
1/2 cup parmesan
1 tsp thyme
1 tsp rosemary
1 tsp oregano
salt and pepper
1/2 cup broth
Instructions
1. Place chopped vegetables at the bottom of the slow cooker in even layers
2. Season chicken with salt, pepper, and herbs, then place on top of vegetables
3. Mix olive oil, garlic, and parmesan, then spread evenly over the chicken
4. Pour broth around the sides to keep moisture without washing off seasoning
5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and vegetables are soft
6. Check vegetables near the end and adjust cooking time if needed
7. Serve warm, making sure to scoop both chicken and vegetables together
Notes
Cut vegetables into larger pieces so they don’t become too soft during cooking
Cooking on low heat gives better texture and more even flavor development
If dish becomes too watery, remove lid near the end to allow excess liquid to evaporate
Reheat with added broth to keep the dish from drying out
