Ingredients
2 cups cooked chicken
1/2 cup corn
1/2 cup black beans
1/2 cup cheese
1/4 cup bell pepper
1 tsp chili powder
1/2 tsp cumin
egg roll wrappers
oil
1 avocado
1/3 cup ranch
1 tbsp lime juice
Instructions
1. Mix chicken, vegetables, cheese, and spices until evenly combined
2. Place filling on egg roll wrapper and fold tightly, sealing edges with water
3. Heat oil over medium heat and fry egg rolls in batches until golden on all sides
4. Place cooked egg rolls on a rack to keep them crisp while cooling slightly
5. Mash avocado and mix with ranch and lime juice until smooth
6. Serve egg rolls warm with avocado ranch for dipping
