Description
Tender chicken breast is tossed with penne pasta in a bold, spicy Arrabiata tomato sauce finished with fresh Parmesan for an easy restaurant-style dinner at home.
Ingredients
2 boneless, skinless chicken breasts
12 ounces penne pasta
2 tablespoons olive oil
5 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1 teaspoon Italian seasoning
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
½ teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon sugar (optional)
½ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley
Extra Parmesan for serving
Instructions
1. Cook the pasta until al dente and reserve 1 cup of pasta water.
2. Season and brown the chicken in olive oil, then transfer it to a plate.
3. Cook the garlic, red pepper flakes, and tomato paste before adding the crushed tomatoes and seasonings.
4. Simmer the sauce for about 10 minutes.
5. Return the chicken to the skillet, add the cooked pasta, and loosen with reserved pasta water if needed.
6. Stir in Parmesan cheese and parsley before serving.
Notes
Do not overcook the pasta.
Freshly grated Parmesan melts best.
Adjust the crushed red pepper flakes to control the spice level.
Store leftovers in the refrigerator for up to 4 days.
